Protein-based aerogels were developed for applications in food systems. They can be utilized as mechanically stable carrier matrices with high inner surfaces. The successful loading of aerogel matrices with omega-3 fatty acid-rich fish oil served as an corresponding application example.
In addition, an important process step in aerogel production, the supercritical CO2 drying, was systematically optimized using a developed predictive mass transport model. A new dimensionless number allows a rational selection of the drying parameters for an optimal process.
