An industrial challenge for the solvent-free synthesis of high-purity mono- or diacylglycerides (MAG's & DAG's) is the intrinsic phase behavior of their reaction system and the resulting low reaction selectivities. With the help of defined amounts of the amphoteric surfactant cocoamidopropyl betaine in a solvent-free biocatalysis, this thesis showed an increase in the selectivity of MAG and the increased solubility of glycerol in the nonpolar reaction phase and equal MAG equilibrium ratios as with use of tert-butanol. Furthermore an online analytic with the means of FTIR-ATR spectroscopy of multiphase reactions was conditionally possible in certain cases. In addition, online FTIR analysis was successfully established in a one-phase biotransformation and used for process control.
